Peel and chop the apples into smaller pieces to make them soft enough to mash.
Transfer the chopped apples into a saucepan along with some water and a cinnamon stick (optional).
Simmer the apples on low heat with the lid on for about 5 minutes to help release their juices.
Stir the apples and cook uncovered for another 5 minutes until almost all the water is absorbed and the apples are tender.
Strain the cooked apples using a sieve to remove any residual water and set aside to cool.
Melt dark chocolate over a pan of simmering water until smooth (milk chocolate can be used as an alternative).
Transfer the warm apples into a clean dry jar, removing the cinnamon stick.
Using a stick blender, pulse the apples until a somewhat smooth emulsion is achieved.
Add the melted chocolate to the apple mixture while it's still warm and pulse quickly to combine, avoiding over-blending to prevent air bubbles.
Prepare a mold by brushing it lightly with butter paper to help release the dessert easily.
Pour the apple and chocolate mixture into the mold and refrigerate for a minimum of 4 hours or overnight to set.
Once set, peel off the butter paper to reveal the creamy texture of the dessert.
