Place sliced onion on a sheet pan to create a bed for the fish.

Drizzle a little olive oil and sprinkle some sea salt on the onions.

Make a few slits in the whole red snapper to help it roast evenly.

Juice some lemons and mince garlic using a mandolin for a fine texture.

Mix the lemon juice, minced garlic, olive oil, oregano, and a little salt to create a dressing.

Pour the dressing over the fish, inside and on the back side.

Season the fish with additional salt and black pepper.

Place the fish on top of the onions in the oven.

Bake for about 40 minutes until the fish is flaky and juices are clear.
