Prime Rib Roast with Yorkshire Pudding

2 tbsp olive oil
2 tsp salt
1 tsp black pepper
4 cups beef broth
1 cup all-purpose flour
1 cup milk
4 large eggs
1/2 tsp salt
1/4 cup beef drippings

Preheat your oven to 450°F (232°C).

Rub the prime rib roast with olive oil, salt, and black pepper.

Place the roast in a roasting pan and roast for 20 minutes at 450°F (232°C).

Reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (130°F for medium-rare).

Remove the roast from the oven and let it rest for at least 20 minutes before carving.

While the roast is resting, prepare the Yorkshire pudding batter. In a bowl, whisk together the flour, milk, eggs, and salt until smooth.

Increase the oven temperature to 425°F (218°C).

Pour the beef drippings into a muffin tin or a baking dish and place it in the oven to heat until the drippings are very hot (about 5 minutes).

Carefully pour the batter into the hot drippings, filling each cup about halfway.
