Boil the chicken eggs for 8–10 minutes over medium heat. Let them cool or dip them in a bowl of water before peeling.

Slice off the end of the garlic clove and smash it to peel. Peel the ginger root using the edge of a spoon and slice it thinly. Trim the pork into medium pieces.

Heat a pan and add cooking oil. Fry the tofu over medium-high heat until golden and crispy for 6–8 minutes per side. Drain on paper towels.

Fry the pork belly over medium heat until light golden brown for about 8-10 minutes.

In a big pot, add the fried pork belly, hard-boiled eggs, fried tofu, ginger, garlic, green onions, dried chili (if using), sugar, fish sauce/soy sauce, dark soy sauce, pepper powder, salt, and pour in the water.

Bring to a boil for about 5-7 minutes, then lower the heat and braise the pork for 30-45 minutes or until completely cooked and tender.

Taste for seasoning and adjust if required.
