1-2 boxes quail eggs (cooked and peeled)
1 medium onion (diced)
~12 dried shiitake mushrooms
2 green onions (chopped into two inch pieces)
4 pieces sliced ginger
2 pieces star anise
2 pieces bay leaves
4 pieces rock sugar
2-3 tbsp dark soy sauce
4 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp cooking wine
2 cups hot water
(~1 cup reserved mushroom water)

Clean and rehydrate shiitake mushrooms in a big bowl of hot water (~30-60 mins), squeeze out water (reserve water) and chop into small pieces.

Add pork belly, some cooking wine, 1/2 green onions, 1/2 ginger to cold water, cook on high, boil for two mins.

Rinse and cut into small pieces.

Sauté pork to render out water and slightly brown meat.

Take out half of the rendered out oil and add onion to cook until translucent.

Add mushrooms, herbs, sauces, sugar, sauté for 5 mins.

Add mushroom water and hot water into pot, bring to boil, reduce heat and simmer for 1 hr.

While meat is cooking, cook quail eggs and peel.

Add quail eggs to meat after an hour, mix and cook for another hour until pork belly is tender.

Reduce liquid and serve with rice.
