Homemade Croutons

5 tablespoons extra virgin olive oil
1 tablespoon butter
1 teaspoon garlic shallot puree or 4 cloves mashed garlic
1/2 cup grated fresh parmesan cheese
1/4 cup chopped Italian flat leaf parsley
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked pepper

Preheat the oven to 350°F.

Cut the baguette into about 1/2 inch cubes.

Measure about 4 cups of the cubed bread into a mixing bowl.

Heat about 5 tablespoons of extra virgin olive oil on low.

Add 1 tablespoon of butter to the oil and let it melt down.

Add 1 teaspoon of garlic shallot puree or 4 cloves of mashed garlic to the oil mixture.

After about 2 minutes, turn off the heat and remove the bigger pieces of garlic.

Drizzle the oil mixture over the bread, ensuring everything is well coated but not saturated.

Add 1/2 cup of grated fresh parmesan cheese to the bread mixture.

Add 1/4 cup of chopped Italian flat leaf parsley.

Add 1/2 teaspoon of kosher salt and 1/4 teaspoon of fresh cracked pepper.

Layer the mixture in a single layer on a sheet pan.

Bake for 20 to 25 minutes until golden brown, turning once during the cooking process.

Remove from the oven and let the croutons cool down.

Store in an airtight container at room temperature for over a week.
