Peach Dutch Baby Pancake

Originating in Germany, the Dutch Baby pancake is a delightful breakfast dish that puffs up in the oven, creating a light and airy texture. Traditionally enjoyed with fruit and powdered sugar, it's a favorite for brunch gatherings. Today, variations abound globally, with many opting for different fruits or toppings, making it a versatile dish for any occasion.
Melt 2 tablespoons of butter in a skillet over medium heat.
Add 1 diced peach and 1 tablespoon of sugar to the skillet and sauté until caramelized, about 5 minutes.
Set the caramelized peaches aside to cool.
In a bowl, whisk together 3 large eggs, 3 tablespoons of sugar, and 3/4 cup of milk until bubbly.
Add 1 teaspoon of vanilla and whisk vigorously again.
Preheat the oven to 375 degrees Fahrenheit and place a 9.5-inch pie plate with 2 tablespoons of unsalted butter inside to melt.
Once the butter is melted, whisk in 3/4 cup of all-purpose flour and a pinch of salt until smooth.
Pour the batter into the melted butter in the pie plate and add the caramelized peaches on top.
Bake in the preheated oven for 30 minutes until puffed up.
Slice additional fresh peaches on top while still warm and serve.
