Heat milk in a saucepan over medium heat until it reaches 190°F (88°C).
Remove from heat and stir in white vinegar until curds form.
Let sit for 5-10 minutes to allow curds to separate from whey.
Line a colander with cheesecloth and pour the curds and whey into it.
Rinse the curds under cold water to remove excess acidity.
Gather the cheesecloth and squeeze gently to remove more whey.
Transfer curds to a bowl and mix in salt and cream to taste.
Add chopped herbs, garlic, and pepper if desired.
Stir until well combined and adjust seasoning as needed.
Cover and refrigerate for at least 1 hour before serving.
