- ●1 tsp salt
- ●1/2 tsp black pepper
- ●1/2 cup feta cheese, crumbled
- ●1/4 cup kalamata olives, pitted and halved
- ●Fresh parsley, for garnish
Instructions
- 1Preheat the oven to 400°F (200°C).
- 2In a large bowl, combine the chicken thighs, cherry tomatoes, red onion, bell pepper, and zucchini.
- 3Drizzle the olive oil over the mixture and sprinkle with oregano, garlic powder, salt, and black pepper. Toss to coat everything evenly.
- 4Spread the mixture in a single layer on a large sheet pan.
- 5Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- 6Remove the pan from the oven and sprinkle the feta cheese and kalamata olives over the top.
- 7Return to the oven and bake for an additional 5 minutes, until the feta is slightly melted.
- 8Remove from the oven and let it rest for a few minutes.
- 9Garnish with fresh parsley before serving.
- 10Serve warm and enjoy your Greek sheet pan dinner!

- 2In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, onion, garlic, egg, oregano, salt, and pepper. Mix until well combined.
- 3Form the mixture into meatballs, about 1 inch in diameter.
- 4Heat olive oil in a large oven-safe skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5-7 minutes.
- 5Pour marinara sauce over the meatballs in the skillet.

- 3Rub the spice mixture all over the chicken thighs, ensuring they are well coated.

- 5Add the chicken thighs, skin-side down, and sear for about 5-7 minutes until the skin is golden brown.
- 6Flip the chicken thighs and add the chopped onion, garlic, ginger, coconut milk, and chicken broth to the skillet.
- 7Bring the mixture to a simmer, then reduce the heat to low and stir in the lime juice.
- 8Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
- 9Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- 10Remove from the oven and let it rest for a few minutes before serving.
- 11Garnish with fresh cilantro before serving.

- 9To serve, place the chilaquiles on a plate, top with a fried egg, sour cream, queso fresco, and chopped cilantro.
