  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and halved
  • Fresh parsley, for garnish

Instructions

  1. 1Preheat the oven to 400°F (200°C).
  2. 2In a large bowl, combine the chicken thighs, cherry tomatoes, red onion, bell pepper, and zucchini.
  3. 3Drizzle the olive oil over the mixture and sprinkle with oregano, garlic powder, salt, and black pepper. Toss to coat everything evenly.
  4. 4Spread the mixture in a single layer on a large sheet pan.
  5. 5Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  6. 6Remove the pan from the oven and sprinkle the feta cheese and kalamata olives over the top.
