Slow Cooker Chicken Noodle Soup

Whole grain noodles offer more fiber; egg noodles are often cheaper.

Add 1 lb of chicken breast boneless and skinless into a 6-quart slow cooker.

Add 1 cup of chopped onion, 1 and 1/2 cup of chopped celery, and 2 cups of peeled and chopped carrots to the slow cooker.

Stir in 2 tablespoons of minced garlic, 1 cup of water, and 6 cups of chicken broth.

Add seasoning: 1 teaspoon of thyme, 1/2 teaspoon of rosemary, 1/4 teaspoon of celery seed, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper.

Allow to cook in the slow cooker for 6 to 7 hours on low or 4 to 5 hours on high.

Once cooked, remove the chicken, shred it, and return it to the slow cooker.

Add 2 cups of noodles and allow to cook for about 10 more minutes.
