Cut the plantains into pieces, ensuring they are not too thin to prevent sinking into the filling.
Salt the plantains and fry them until brown, then remove from heat.
Season the chicken breast with salt, seasoning cubes, and pepper, and mix well.
Oil the pan and add the chicken breast to fry for 2-3 minutes until slightly brown, flipping sides as needed, then remove from heat.
In the same pan, add onions and sauté with minimal oil.
Add crushed garlic cloves and mix, allowing to fry briefly.
Add scotch bonnet pepper and diced tomatoes, mixing well and allowing to fry.
Season with curry powder, thyme, extra pepper, and salt, mixing together.
Introduce the cooked chicken breast back into the mixture and combine well, then add bell peppers and mix for about a minute before removing from heat.
Crack open 8 eggs into a bowl, add a sprinkle of salt, and whisk together.
Add the cooled filling to the egg mixture and mix well.
Oil the pan again to prevent sticking, then pour in the egg and filling mixture evenly.
Arrange the fried plantains in a circular manner on top of the egg mixture, adding bell peppers in the middle for color.
Cover the pan with a lid and cook on very low heat for 20 minutes until the middle is set and hard.
