15.5 ounces canned pigeon peas
1/4 cup coconut milk
2.5 cups Uncle Ben's long grain rice
3 cups water
ground black pepper
1 Scotch bonnet pepper

Add 5 slices of thick cut Hickory bacon to the pot.

Add 1 medium chopped yellow onion and 1/2 chopped green bell pepper to the pot and caramelize the veggies.

Ground up 1 beef bouillon cube and add it to the pot.

Add the contents of a 15.5-ounce can of pigeon peas (including the water) to the pot and stir.

Add 2.5 cups of Uncle Ben's long grain rice to the pot.

Add 3 cups of water to the pot.

Add a sprinkle of ground black pepper to the pot.

Add the cooked bacon back into the pot and 1 Scotch bonnet pepper.
