Grab a bowl and add 2 tbsp of Worcestershire sauce, 1 tbsp of soy sauce, 1 tbsp of ketchup, a generous pinch of light brown sugar, and 1 tbsp of sesame seeds. Mix all those together until combined.

For the rich miso sauce, grab a small saucepan and add 100 ml of dashi stock, 1 tbsp of mirin, 1 tbsp of sake, 2 tbsp of light brown sugar, 1 tsp of soy sauce, and 2 tbsp of red miso. Bring that to a boil over medium heat and stir until smooth.

Once it starts to boil, reduce the heat and simmer for about 10 minutes or until it has thickened, stirring occasionally.

For the toasty and nutty sesame sauce, toast 2 tbsp of sesame seeds in a dry pan over medium heat, keeping them moving to prevent burning. Once golden, transfer them to a mortar and grind into a powder.

Transfer the ground sesame seeds to a bowl and add 2 tbsp of soy sauce, 2 tbsp of Worcestershire sauce, 1 tsp of sugar, 2.5 tbsp of water, and 1 tbsp of ketchup. Mix until smooth.
