Tonkatsu Sauce

Cultural Context

Tonkatsu sauce originated in Japan as a condiment for tonkatsu, a breaded and deep-fried pork cutlet. This sauce embodies the umami-rich flavors of Japanese cuisine, blending sweet, tangy, and savory elements. Today, it's widely used beyond tonkatsu, enhancing various fried dishes and even grilled meats around the world.

JPJPother
4 servings
Servings4
1 cup tomato ketchup
2 tablespoons sugar
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup mirin
1 teaspoon grated garlic
1 teaspoon grated ginger
1/2 cup apple, finely chopped
1/2 cup peach, finely chopped
1/4 cup onion, finely chopped
1/4 cup pitted dates, chopped
2 bay leaves
1/2 teaspoon ground cloves
1/2 teaspoon allspice
1/4 teaspoon grated nutmeg
1/2 cup water

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

Start by preparing the fruits and vegetables: roughly chop a Granny Smith apple, a peach, and an onion (peel the onion).

2

Cut pitted dates from a block to the amount needed.

3

Add grated garlic and ginger to enhance the savory factor.

4

In a heavy-bottom pot, add sugar and a small amount of water to make caramel over medium heat, without stirring.

5

Once the caramel is brown, carefully add a bit of water to break it up.

6

Add soy sauce, Worcestershire sauce, and red wine vinegar to the pot, followed by tomato paste, stirring until incorporated.

7

Add the chopped fruits, vegetables, and spices to the pot, mixing well.

8

Add a bit of water to thin the sauce and reduce heat to low, allowing it to simmer for 30 minutes to an hour until tender.

9

Remove bay leaves after cooking, then puree the sauce using an immersion blender or a regular blender, adding water if too thick.

10

Allow the steam to dissipate before fully removing the lid from the blender to avoid burns.

11

Pour the finished sauce into a bowl or a squeeze bottle for storage.
