Prepare chocolate molds or a parchment-lined pan.
Measure out 7 oz (about 1 and 1/2 cups) of chocolate chips or finely chopped chocolate.
Melt the chocolate in a microwave-safe bowl in 30-second intervals at 60% power, stirring between bursts.
Once the chocolate is about 50% melted, stop heating and mix vigorously until smooth.
If all the chocolate isn't melted, microwave for another 3 seconds, stirring vigorously again.
Pour 1 cup (60 g) of pea protein crisps into the melted chocolate and mix to combine.
Spoon the mixture into your molds or spread it on a parchment-lined tray to make bark.
Tap the molds down to help the chocolate settle into the molds.
Sprinkle with flaky sea salt on top if desired before the chocolate sets.
Let the bars set at room temperature for about 3 to 5 minutes or refrigerate for 30 minutes until fully set.
Remove the bars from the molds or cut the bark into pieces.
