Sift all-purpose flour into a bowl.
Add salted butter to the sifted flour and mix until it resembles breadcrumbs.
Add cold water gradually, mixing until the dough comes together.
Transfer the dough onto a surface and knead gently until combined, being careful not to over-knead.
Cover the dough with a clean film and let it rest.
Chop the carrots, Irish potatoes, and onions; set aside.
In a pot, add cleaned chicken breast, onion, salt, and seasoning cubes.
Add a little water and cook the chicken on medium to high heat for 7 to 10 minutes until done.
Transfer the cooked chicken to a food processor and shred it until finely shredded.
In a skillet, heat a little vegetable oil and sauté the chopped onion and garlic for a few seconds to a minute.
Add the chopped carrots and Irish potatoes to the skillet and stir to combine; cook for 2 to 3 minutes.
Add spices and seasonings, cooking for another minute or two on medium to low heat.
Add the shredded chicken to the skillet and stir; add a little more water if needed.
Add a little flour to the mixture to thicken the filling and stir until combined; set aside to cool completely.
Roll out the rested dough on a floured surface until thin but sturdy enough to hold the filling.
Cut the rolled dough into desired shapes using a pie cutter or improvised method.
Add the filling to the dough and brush the edges with egg wash to seal.
Poke holes in the top of the pie for ventilation.
Brush the top with egg wash for a golden finish.
Transfer the pie to the oven and bake for 25 to 30 minutes, checking for doneness based on your oven's heating.
Remove the pie from the oven once golden brown.
