14oz / 400g can of good quality Chopped Tomatoes
6 Olives, sliced
1/2 small Onion, finely diced
1 clove of Garlic, minced
1 tbsp Balsamic Vinegar
1/2 tsp Dried Oregano
1/2 tsp Dried Basil
1/2 tsp Chilli Flakes
Salt
Sugar
Black Pepper
Extra Virgin Olive Oil

Add a drizzle of oil into a small pot or pan over medium heat and fry the finely diced onion until it begins to brown/soften.

Add the minced garlic and fry for another minute until it begins to brown.

Pour in the chopped tomatoes, then add the dried basil, dried oregano, salt, chilli flakes, and sugar (all to taste) along with a pinch of black pepper. Stir to combine and simmer for 5 minutes.

Pour the tomato mixture into a suitably sized baking dish and place the block of feta in the center.

Drizzle the feta with extra virgin olive oil and sprinkle with a pinch of oregano.

Scatter the sliced olives around the feta and bake in the oven at 200C/390F for 15-20 minutes or until it starts to go golden around the edges and is very soft to touch.
