Lemon Cream Cheese Brownies

Originating in the United States, lemon cream cheese brownies are a delightful twist on traditional brownies, combining rich chocolate with a tangy lemon cream cheese layer. These brownies are perfect for spring gatherings and celebrations, offering a refreshing flavor contrast. Today, they are enjoyed at various occasions, from potlucks to dessert tables, showcasing the versatility of brownies in American baking culture.
In a big mixing bowl, add 125 g of unsalted butter and 3/4 cup of white sugar.
Add 200 g of cream cheese to the bowl.
Add 2 eggs to the mixture.
Using an electric hand mixer, beat the butter, cream cheese, sugar, and eggs together until nice and creamy.
Add 3/4 cup of plain all-purpose flour and carefully beat it into the mixture.
Add 3 tablespoons of lemon juice to the mixture.
(Optional) Add 3 to 4 drops of yellow food dye and mix one final time.
Prepare an 8 in by 8 in square cake pan by lightly greasing it with spray oil and lining it with nonstick baking paper.
Pour the lemon batter into the cake pan and spread it out evenly.
Preheat the oven to 170° C (350° F) and bake the brownies for about 20 minutes.
After 20 minutes, check if the brownies are set in the center and light and springy.
Leave the brownies to cool on the counter for half an hour.
To make the lemon icing, sift 1 cup of icing sugar to remove lumps.
Add 3 tablespoons of lemon juice to the icing sugar and mix until thick and spreadable.
Pour the cooled icing over the brownies and spread it out evenly.
(Optional) Grate fresh lemon zest over the top of the icing.
Pop the brownies into the fridge for 10 minutes to set the icing.
Slice up and serve the lemon brownies.
