Lemon Cake

200g (1 cup) Sugar
1 teaspoon Lemon zest
110g (1/2 cup) Butter
30ml (2 tablespoons) Vegetable oil
2 Eggs
30ml (2 tablespoons) Lemon juice
200g (1 ⅓ cups) Plain Flour
1 teaspoon Baking powder
100ml (1/3 cup & 2 tablespoons) Milk
1 teaspoon Vanilla extract
Juice of 2 Lemons
100g (½ cup) Sugar (for lemon curd)
55g (¼ cup) Butter (for lemon curd)
2 Eggs (for lemon curd)
60g (½ cup) Powdered Sugar (for icing)
1-2 tablespoons Milk (for icing)

In a bowl, add the Flour, baking powder, sugar, and the Lemon zest. Mix well.

Now add the Eggs, Oil, Butter, Milk, Lemon juice, and Vanilla to the same bowl.

Whisk at low speed for about 30 seconds.

Mix with a spoon to make sure everything is combined.

Whisk again for about 30 seconds. Give it a final mix.

Pour into a lined baking tray.

Now bake in a preheated oven at 175°C (350°F) for 30-35 minutes.

For the Lemon curd, put a bowl over a simmering pan (Bain-marie method).

Add the Lemon juice and the sugar. Mix and let it melt.

Now add the Butter. Mix until it dissolves.

Now add lightly whisked eggs. Keep whisking continuously until you get a thicker mixture (about 4-5 minutes).

Pour into a bowl and cover.

Once the cake is ready, poke holes while it's warm. Pour the lemon curd over it. Let it cool down (or chill in the fridge).

Make the white icing by mixing the powdered sugar and the milk. Add to a small sandwich bag/piping bag and draw white lines over the curd.
