Lemon Cake

1 c Soften butter
2 c granulated sugar
3 room temperature eggs
3 c cake flour
1/2 tsp baking powder
1/4 tsp salt
2 tbsp lemon zest
2 tbsp lemon juice
1 c Buttermilk
1/4 tsp lemon extract
4 ozs cream cheese
1 stick butter
2 tsp lemon juice
2 tsp lemon zest
4 c powder sugar
Milk or cream if needed 1 tsp @ at a time
Food coloring (optional)

Preheat the oven to 350°F (175°C).

In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add the room temperature eggs one at a time, mixing well after each addition.

In another bowl, combine the cake flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, starting and ending with the dry ingredients.

Mix in the lemon zest, lemon juice, and lemon extract until just combined.

Pour the batter into prepared cake pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.

For the frosting, beat together the cream cheese and butter until smooth.

Add the lemon juice and lemon zest, then gradually mix in the powdered sugar until smooth and creamy.

If needed, add milk or cream one teaspoon at a time to reach desired consistency.

Frost the cooled cake with the cream cheese frosting and add food coloring if desired.
