Combine the cooked potatoes, sautéed onions, crumbled feta cheese, chopped parsley, salt, and black pepper in a bowl.
Lay one sheet of phyllo dough on a greased baking tray and brush with olive oil.
Layer additional sheets of phyllo dough, brushing each with olive oil, until you have about 4-5 sheets.
Spread the potato mixture evenly over the phyllo layers.
Fold the edges of the phyllo over the filling to enclose it.
Brush the top with olive oil and score the surface lightly with a knife.
Bake in the preheated oven until golden brown, about 30-35 minutes.
Remove from the oven and let cool for a few minutes before slicing and serving.
