- ●2 ripe bananas, mashed
- ●1 cup almond flour
- ●1/2 cup sugar
- ●1/4 cup unsalted butter, melted
- ●2 large eggs
- ●1 tsp vanilla extract
- ●1 tsp baking powder
- ●1/2 tsp salt
- ●1/2 tsp cinnamon (optional)
Instructions
- 1Preheat your oven to 350°F (175°C).
- 2In a large mixing bowl, combine the mashed bananas and melted butter until well mixed.
- 3Add the sugar, eggs, and vanilla extract to the banana mixture and stir until combined.
- 4In a separate bowl, mix the almond flour, baking powder, salt, and cinnamon (if using).
- 5Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- 6Pour the batter into a greased 9-inch round cake pan.
- 7Smooth the top with a spatula and tap the pan gently on the counter to remove air bubbles.
- 8Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- 9Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- 10Slice and serve as desired.

- ●1 tsp baking powder
- ●1/2 tsp baking soda
- ●1/4 tsp salt
- ●1/2 cup granulated sugar
- ●2 large eggs
- ●1 tsp vanilla extract
- ●1/2 cup buttermilk
Instructions
- 1Preheat the oven to 350°F (175°C).
- 2In a 9-inch round cake pan, melt the butter over low heat. Add the brown sugar and stir until dissolved. Remove from heat.
- 3Slice the bananas into rounds and arrange them in a single layer over the brown sugar mixture in the pan.
- 4In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- 5In another bowl, cream together the granulated sugar and remaining butter until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- 6Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
- 7Pour the batter over the bananas in the cake pan, spreading it evenly.
- 8Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- 9Remove from the oven and let it cool for 10 minutes. Invert the cake onto a serving plate, so the bananas are on top.
- 10Serve warm or at room temperature.
