How to Make Pickled Carrot, Daikon & Cucumber (三色泡菜)

Prepare the vegetables by julienning the carrots, daikon, and cucumber.

In a saucepan, combine rice vinegar, sugar, salt, and water.

Heat the mixture over medium heat until the sugar and salt dissolve completely.

Remove the saucepan from heat and let the pickling liquid cool to room temperature.

Add red pepper flakes, grated ginger, and minced garlic to the cooled pickling liquid.

Place the julienned vegetables in a clean jar or container.

Pour the pickling liquid over the vegetables, ensuring they are fully submerged.

Seal the jar and refrigerate for at least 24 hours before serving.

Before serving, sprinkle sesame seeds and chopped scallions on top.

Serve as a refreshing side dish or condiment.
