Start by cooking 6 slices of bacon in a pan until crispy.
Once cooked, place bacon on a tray lined with paper towels to absorb excess grease.
In a bowl, combine 1/3 cup mayonnaise, 1 tablespoon coarse mustard, 1/4 teaspoon ground garlic, 1/4 teaspoon chipotle chili powder, and 1/4 teaspoon smoked paprika. Mix well to create the smoky chipotle mayo spread.
Wash and prepare a head of romaine lettuce, slicing it to fit the sandwich.
Slice an avocado and an organic heirloom tomato.
Slice 2 hard-boiled eggs.
Slice some red onion for additional flavor, if desired.
Toast 3 slices of bread under the broiler until golden brown on both sides.
Spread a generous amount of the smoky chipotle mayo on each slice of toasted bread.
Layer romaine lettuce on the bottom slice of bread to prevent sogginess.
Add sliced tomatoes on top of the lettuce.
Place a layer of smoked turkey ham on top of the tomatoes.
Add cheese and red onion on top of the turkey ham.
For the second layer, add sliced hard-boiled eggs, seasoning with salt and pepper if desired.
Add the crispy bacon on top of the eggs.
Layer sliced avocado on top of the bacon.
Carefully flip the sandwich over to complete it.
Cut the sandwich in half to reveal the layers.
