1

Prepare the breading station: In one bowl, combine breadcrumbs, parsley, paprika, cayenne, salt, and black pepper.

2

In another bowl, place flour.

3

In a third bowl, whisk together eggs and milk.

4

Sprinkle both sides of the ham steak with kosher salt and black pepper, then coat both sides in the flour.

5

Place the ham steak into the egg and milk mixture, turning to coat.

6

Finally, place the ham steak in the breadcrumb mixture and turn to coat.

7

Heat cooking oil in a large skillet over medium heat and add butter.

8

Cook the ham steaks until the edges start to look golden brown, about 2 minutes on each side.

9

Remove the cooked ham steaks to a paper towel-lined pan and keep warm.

10

Pour off the oil into a heat-proof bowl, without cleaning the skillet, and return it to the stove over medium-low heat.

11

Add 2 tablespoons of the oil back to the skillet with some butter and allow it to heat up.

12

When the oil is hot, add diced ham and sauté for a few minutes to get some nice color and flavor.

13

Add onions and garlic and continue to sauté until soft and nicely colored.

14

Sprinkle flour evenly over the hot pan and mix with the oil, cooking until golden brown.

15

Pour in milk, stirring constantly, and bring to a simmer.

16

Add salt, lemon juice, and cayenne to taste, and cook stirring constantly until the gravy is smooth and thick, about 5 to 10 minutes.

17

Taste to ensure the gravy is sufficiently seasoned.

18

Plate the chicken fried ham with a side of mashed potatoes, your favorite vegetables, and the gravy on top.
