500g - rice flour
550ml- coconut milk
150g - Sugar
2 tablespoons- yeast
1 tablespoon - cardamon ( grounded)
1 egg

In a mixer, add all the ingredients and blend them until well combined and smooth (runny in consistency).

Pour the batter in a large bowl, cover and let it rise until doubled in size or forms bubbles.

Add oil on a pan (pan with holes) about a tbs in each hole, heat on medium heat, make sure the pan/oil is warm enough before adding the batter.

Carefully, pour your batter (3/4 full) in the pan, do not overfill. Cook for about 2-3 minutes on one side, keep the heat on low so that the rice cakes cook through without burning.

When you notice the rice cake firming up and their bottoms look coloured, quickly flip them using chopsticks. Continue cooking on the other side to a good golden colour.

Remove them and repeat the process until the batter is finished.

Serve warm and enjoy with tea, coffee or hot chocolate.
