Prepare the ingredients and have everything prepped before starting.
Cut the beef fillets into medallions and pound them to about 3/4 inch thick.
Season the medallions with salt and black pepper.
Heat avocado oil in a stainless steel pan over medium-high heat.
Sear the medallions for about 1-2 minutes per side until browned and rare.
Remove the medallions from the pan and set aside.
Add crimini mushrooms to the pan and sauté for about 4-5 minutes until browned.
Add minced shallot and butter to the pan, cooking for about 2 minutes until softened.
Stir in tomato paste and cook for about 1 minute.
Add cognac to the pan and optionally flambé, then let it cook until mostly evaporated.
Stir in low sodium beef stock and heavy cream, simmering until thickened for about 3 minutes.
Return the medallions to the pan to warm through, basting with the sauce.
