Simmer Yukon gold potatoes in a pot, salting the water while boiling.
Prepare 3 filet mignons, salting all sides generously and bringing them to room temperature.
Heat a cast iron skillet until smoking hot, adding a small amount of butter to prevent sticking.
Cook the filet mignons for exactly 2 minutes on each side without moving them.
Brown the edges of the steaks for additional searing.
Transfer the steaks to a warmed oven at 400 degrees for a couple of minutes.
In the same skillet, add 2 tablespoons of butter and 1/4 cup of shallots, cooking until softened.
Add Worcestershire sauce, lemon juice, and 2 teaspoons of dried mustard to the skillet.
Pour in 1/4 cup of brandy carefully to avoid flare-ups, then turn the heat back up.
Add 1 tablespoon of dried parsley and 1/2 cup of heavy whipping cream, along with a pinch of salt and pepper.
Add mushrooms to the sauce and let it cook for a few minutes until the mushrooms are cooked through.
Prepare mashed potatoes by mashing the boiled Yukon gold potatoes and adding warmed butter and heavy whipping cream.
