Today, Holubtsi are enjoyed in various forms across Eastern Europe, adapting to local tastes and ingredients, while still holding a special place in Ukrainian culinary heritage.

Rinse the rice and put it to boil on low heat.
Prepare the cabbage: Remove any damaged or wilted outer leaves and cut out the middle.
Prick the cabbage with a fork and simmer for a few minutes in boiling water.
Remove the leaves one by one and set aside to cool.
Finely chop the first onion and fry it in sunflower oil until golden brown over low heat.
Remove the top layer on the back of each cabbage leaf to make them softer.
In a large bowl, combine the cooked rice, grated carrots, fried onions, and minced meat.
Salt and pepper the mixture, then add tomato paste and mix well.
Finely chop the second onion and grate more carrots for the roast.
Fry the second onion and grated carrots on low heat.
Place the cut-off parts of the cabbage leaves and the rest of the leaves on the bottom of the pot to prevent burning.
Wrap the stuffing in a cabbage leaf and place it in the pot.
Prepare the sauce by pouring water into the pan where the vegetables were roasted, adding a broth cube, and bringing it to a boil.
Add tomato paste, cream, salt, pepper, and parsley to the sauce and stir.
Pour the sauce over the stuffed cabbage rolls and add water to cover them entirely.
Spread the rest of the leaves on top, cover with a plate and a lid, and cook over low heat for 1.5 to 2 hours.
Serve with sour cream.
