Peel the skin off the eggplant and peppers, leaving some burnt skin for flavor.
Chop the eggplant and peppers finely.
Add one roughly chopped tomato and garlic to the mixture.
Pulse the mixture in a food processor until finely chopped but not too fine.
Add roughly chopped parsley, lemon juice, and salt to taste, and pulse a few more times to combine.
