Soak skewers in water for 30 minutes to prevent burning.
Cut liver into bite-sized pieces and place in a bowl.
Chop onions, bell peppers, and tomatoes into chunks.
Add chopped vegetables to the bowl with liver.
Mix in olive oil, minced garlic, cumin, paprika, salt, and black pepper until well combined.
Marinate mixture for at least 30 minutes in the refrigerator.
Preheat grill to medium-high heat.
Thread liver and vegetables onto skewers, alternating pieces.
Brush skewers lightly with olive oil before grilling.
Place skewers on the grill and cook for 10-15 minutes, turning occasionally, until liver is browned and cooked through.
Remove from grill and drizzle with lemon juice.
Garnish with fresh herbs before serving.
