Boil salted water and add 12 oz gluten-free elbow macaroni, cooking until al dente, about 7-8 minutes.
While the noodles are cooking, prepare the other ingredients by mashing 3 hard-boiled eggs with a fork.
In a large bowl, combine the mashed eggs, 8 oz diced ham, 1/4 cup red onion, 2 tablespoons pimentos, 1 teaspoon minced garlic, 1 cap vinegar, 1 cup mayonnaise, 1 teaspoon black pepper, 1 teaspoon oregano, and 1 tablespoon mustard.
Mix all ingredients together thoroughly before adding the cooked noodles.
Once the noodles are cooked, drain and add them to the bowl with the other ingredients.
Mix everything together with a spatula until the noodles are evenly coated.
Taste and adjust seasoning with more salt, pepper, or mayonnaise as desired.
Garnish with leftover pimentos or parsley before serving.
