Cultural Context
Originating from the Garifuna culture of Belize, Dukunu is a traditional dish made from cornmeal and coconut milk, often enjoyed during festivities and celebrations. It reflects the fusion of indigenous and African culinary practices, celebrating the rich cultural heritage of the region. Today, Dukunu is cherished not only in Belize but also in various Caribbean communities, showcasing the adaptability of this delightful treat.

Coconut oil enhances flavor and is dairy-free.
Cut the dry coconut into pieces and blend it.
Grab 2 banana leaves and a chunk from the dry section to tie the blue jaws.
Cut the banana leaves towards the hard section in the middle to avoid breaking them.
Wash the banana leaves with soap and water, then dry them.
Quail the banana leaves on the stove to make them pliable, or soak them in hot water after washing.
Grease your hands to peel the bananas to prevent staining, core them, and then grate them using the finest part of the grater.
Prepare sweet potatoes and add them to the mixture along with cornmeal and flour for binding.
Add half a cup of grated coconut to the mixture.
Add 1.5 cups of sugar, 1 tablespoon of vanilla, 1 teaspoon of cinnamon, and 1 teaspoon of nutmeg to the mixture.
Incorporate cornmeal and flour into the mixture, then add 1 cup of coconut milk while controlling the liquid amount.
Add 1.5 teaspoons of salt and 2 tablespoons of butter to the mixture.
Use a 1/3 cup to portion the mixture onto the banana leaves, folding them to create packages.
Tie the packages securely using the banana leaf or Baker's twine.
Boil water with a pinch of salt and cinnamon, then add the packages to simmer for 1 hour.
Prepare a sauce by boiling coconut, then adding butter, sugar, cinnamon, vanilla, and rum to taste.
Thicken the sauce with a teaspoon of flour mixed with water, then add rum at the end before turning off the heat.
