Bring a small saucepan over a low flame.
Combine equal parts coconut milk and coconut cream in the saucepan and bring to a light boil, stirring to avoid burning.
Add 1/2 cup coconut sugar and whisk vigorously for about a minute.
Reduce heat to a simmer and simmer the mixture for 20 minutes until it reduces by about half to a third of its volume.
Turn off the flame and whisk the mixture again to cool it slightly.
Add 1 teaspoon vanilla, 1 teaspoon cinnamon, and zest of 1 lemon to the mixture and whisk until combined.
Allow the mixture to cool further to prevent cooking the eggs.
Preheat the oven to 350°F (175°C).
Fill a baking dish about one third of the way with water for a water bath.
Transfer the cooled milk mixture to another bowl.
In a separate large mixing bowl, crack 6 eggs and whisk them to break up the yolks.
Pour a steady stream of the milk mixture into the eggs while whisking vigorously to avoid scrambling the eggs.
Distribute the mixture into 6 ramekins.
Prepare a caramel layer by adding a tablespoon of water and pumpkin puree to a saucepan over medium heat, stirring until it reaches a syrupy texture.
Line each ramekin with equal amounts of the caramel and allow it to set.
Place the ramekins in the oven and set a timer for 20 minutes, rotating halfway through.
After baking, carefully remove the ramekins from the water bath using tongs and let them cool for about 15 minutes.
Cover the ramekins and refrigerate for 6 to 8 hours, preferably overnight.
