75 g unsalted butter (cut into 1 cm cubes)
1/2 cup sour cream (or yogurt, full fat best)

1 cup Red Leicester, cheddar, or other flavored cheese
200 g bacon (streaky, chopped)
1/4 cup green onion (finely sliced)

Place bacon in a cold non-stick pan over medium heat. Once the bacon fat melts, turn the heat up to medium high and stir for 3 minutes or until golden. Drain on paper towels.
