These brownies often feature a creamy topping and colorful sprinkles, making them a favorite among children and adults alike. Modern variations may include healthier ingredients like cottage cheese, adding protein while maintaining the indulgent taste.
Preheat your oven.
Line a baking tray with parchment paper, ensuring it goes up the sides by crisscrossing two pieces of parchment paper.
Mix dry ingredients: flour, cocoa powder, baking soda, and salt; whisk to combine and set aside.
In a larger bowl, combine milk and cottage cheese; use an immersion blender to puree until smooth.
Whisk in melted butter and vanilla.
Crack in 1 egg and add granulated sugar; whisk all ingredients together until combined.
Add in melted chocolate and whisk until completely incorporated.
Add dry ingredients to the wet mixture; start mixing with a whisk and then switch to a rubber spatula to ensure everything is well combined.
Pour the batter into the prepared baking pan and flatten it out with an offset spatula or regular spatula.
Place in the preheated oven for 20 minutes.
Check with a toothpick to ensure it comes out clean in the center; let the brownies cool.
To make the ganache, pour hot cream over chocolate chips and gently stir with a spatula until smooth and shiny.
Gently remove the brownie from the pan, keeping the parchment paper underneath.
Pour the chocolate ganache over the brownie and smooth it out with the back of a spoon or spatula.
Sprinkle candy coated chocolate chips on top.
Transfer the brownie to a cutting board and refrigerate for 20 minutes to cool for clean cuts.
Run a knife under hot water, wipe it down with a paper towel, and cut straight lines into the brownie.
