Make the honey bourbon marinade by combining honey, brown sugar, soy sauce, bourbon, red pepper flakes, and garlic in a bowl until completely combined.
Marinate the sirloin steak in the marinade, squeezing out as much air as possible from the ziplock bag before sealing it.
Refrigerate the marinating steak for at least 2 hours, up to 8 hours, flipping the bag every few hours if possible.
Heat the grill or grill pan over medium heat.
Remove the steak from the marinade and blot the excess marinade off with a paper towel.
Place the steak on the hot grill and cook for 2-5 minutes, then flip and cook for another 3-5 minutes for medium-rare (about 135°F).
If desired, cook longer for a more well-done steak.
Transfer the steak to a cutting board and let it rest for about 5 minutes to redistribute the juices.
Thinly slice the sirloin steak against the grain and serve.
