Welcome to the kitchen and introduce the recipe for Maple Pecan Banana Bread.
Place 1/2 cup unsalted softened butter and 1/4 cup white granulated sugar into a large mixing bowl.
Beat together the butter and sugar with a mixer until light and fluffy, about a couple of minutes.
Add 2 large eggs to the mixture and beat again for a couple more minutes until well combined.
Add 1 teaspoon vanilla extract and 1 teaspoon maple syrup extract (optional) to the wet ingredients.
Pour in 1/2 cup pure maple syrup and 1/2 cup Greek yogurt, then mix for a couple of minutes until combined.
In a separate bowl, sift together 1.5 cups all-purpose flour, 1/2 teaspoon baking soda, 1 teaspoon baking powder, and 1/4 teaspoon salt.
Sift the dry ingredients into the wet mixture and mix for about a minute until well incorporated.
Set the batter aside and prepare the bananas by mashing 1 cup of ripe bananas (about 1.5 bananas) with a fork.
Add the mashed bananas and 1/2 cup diced pecans to the batter, folding everything together with a spatula until uniform.
Preheat the oven to 350°F (175°C) and prepare an 8.5-inch loaf pan by spraying it with baking spray and lining it with parchment paper.
Transfer the batter into the prepared loaf pan and sprinkle additional pecans on top.
Bake in the oven at 350°F for about 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, use the parchment paper to lift the bread out of the pan and set it onto a wire rack to cool.
Prepare the maple glaze by mixing 1 cup of confectioners sugar with 2 tablespoons of maple syrup and cream until the desired consistency is reached.
Drizzle the glaze over the cooled banana bread.
Slice the banana bread to reveal the inside with bits of pecans and bananas.
