In a large bowl, combine the flour, sugar, and salt.

In a small saucepan, warm the milk until lukewarm. Dissolve the yeast in the warm milk and let it sit for about 5 minutes until frothy.

Add the yeast mixture to the flour mixture and knead until a smooth dough forms.

Cover the dough with a kitchen towel and let it rise in a warm place for about 1 hour, or until doubled in size.

Once risen, roll out the dough on a floured surface into a rectangle about 1 cm thick.

Spread the softened butter evenly over the dough, then sprinkle the cinnamon and brown sugar on top. Add the chocolate and raisins at this stage.

Fold the dough into thirds, like a letter, and roll it out again into a rectangle.

Cut the dough into triangles and twist each triangle from the base to the tip to form a spiral shape.

Place the twisted dough on a baking sheet lined with parchment paper and let them rise for another 30 minutes.

Preheat the oven to 200°C (400°F). Brush the tops of the Franzbrötchen with beaten egg.
