Cook 4 pieces of bacon in a large pot until crispy, then crumble and set aside, keeping the grease in the pot.
Add 1/2 cup chopped yellow onion and 2 diced ribs of celery to the pot and sauté until softened.
Add 4 cut-up potatoes to the pot and stir to coat them in the bacon grease.
Pour in 1 bottle of clam juice and stir.
Add 1 tablespoon of gluten-free cornstarch and mix well.
Simmer on medium heat without boiling, stirring occasionally.
After about 30 minutes, add 1/2 cup of whipping cream and 2 cans of drained minced clams.
Season with salt and pepper to taste, and garnish with crumbled bacon before serving.
