Lemon Madeleines

Cultural Context

Lemon Madeleines are a delightful variation of the classic French madeleine, a small sponge cake traditionally enjoyed with tea or coffee. Originating from the Lorraine region of France, these shell-shaped treats have become a symbol of French patisserie. The addition of lemon zest and juice adds a refreshing twist, making them perfect for springtime gatherings or afternoon snacks. Today, madeleines are cherished worldwide, often enjoyed for their light, airy texture and delicate flavor.

2

In a stand mixer, combine eggs, sugar, and lemon zest; mix until combined.

3

Sift together flour and baking powder, then place salt on top.

4

Add inverted sugar to the mixture and then the dry ingredients; mix until just combined.

5

Drizzle the cooled butter into the mixture and combine well.

6

Transfer the mixture to a bowl and cover the surface with plastic wrap.

7

Refrigerate the mixture for a minimum of 8 hours or overnight.

Brush melted butter into each cavity of a madeleine tin to grease it.

9

Pipe the chilled mixture into the madeleine tin, filling each cavity 3/4 full.

10

Preheat the fan-forced oven to 200°C (392°F).

11

Bake the madeleines for 8 to 10 minutes at 190°C (374°F) after placing them in the oven.

13

Once baked, transfer the madeleines to a cooling rack and brush lemon syrup on both sides.

Temper white chocolate and color it with oil soluble color if desired.

17

Place the chocolate-coated madeleines in the fridge for about 10 minutes to set.
