Peel the pears, keeping them shapely and voluptuous.

In a saucepan, combine 2 tablespoons of water and 1/4 cup of sugar, and add 1 tablespoon of honey.

Cook the mixture until it forms a caramel syrup, swirling it to prevent burning.

Once the syrup is light golden, sprinkle in 1 tablespoon of raw shelled pistachios and a pinch of coarse sea salt.

Let the caramel syrup harden after pouring it onto a surface.

Break the hardened brittle into pretty pieces.

Serve the poached pears slightly warm or cooled, topped with the brittle.

Pour the reduced poaching liquid (made from green tea) over the pears.

Optionally, add whipped cream to the dish.
