Start by measuring out 1/2 cup of butter (125 ml) and 1 cup of granulated sugar (250 ml).
Use a hand mixer to whip the butter and sugar together until light and fluffy.
Add 2 large eggs one at a time, mixing well after each addition, along with 1 teaspoon of vanilla extract.
In a separate bowl, combine 1 and 3/4 cups of all-purpose flour (425 ml), 1 teaspoon of baking soda (5 ml), 1 teaspoon of baking powder (5 ml), and 1/2 teaspoon of salt (2 ml). Whisk together until evenly mixed.
Mash 1 cup of ripe bananas (about 3 bananas) and prepare to alternate adding the flour mixture and mashed bananas to the butter mixture, starting and ending with the flour.
Mix the batter by hand to avoid overmixing, alternating between adding the flour and bananas.
In another bowl, combine 1/4 cup of all-purpose flour (60 ml), 1/2 cup of fine coconut (125 ml), 1/4 cup of chopped walnuts (60 ml), and 1/2 cup of chopped cherries (125 ml). Mix these ingredients together.
Fold the fruit and nut mixture into the batter gently.
Prepare a 9x5x3 inch (22 cm x 12 cm x 7 cm) loaf pan by lining it with a loaf liner and spraying it with cooking spray or brushing it with oil.
Pour the batter into the prepared loaf pan and tap it gently to remove air pockets.
Bake in a preheated oven at 350°F (175°C) for 50 to 60 minutes, or until a toothpick comes out clean.
Let the loaf cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
