1/4 cup cilantro
2 tablespoons tomato paste
1 tablespoon harissa
1 tablespoon paprika
2 pepperoncini
2 tablespoons lemon juice

Chop the onion and garlic in a food processor.

Put chopped onion and garlic in a saucepan over medium heat.

Add bay leaf and chickpeas.

Season with salt, black pepper, cumin, coriander, and add 1 tablespoon of olive oil.

Cook for about 1 minute.

Cover with hot or boiled water, adding about 4 cups for now, with more to be added later.

Bring to a boil, then let it cook on medium-low heat for about 45 minutes to 1 hour depending on the chickpeas.

Prepare the salsa by placing grated tomato, serrano pepper, garlic, and cilantro in a food processor and process for a few seconds.

Place processed mixture in a bowl and add tomato paste and homemade harissa.

Add paprika, salt, coriander, cumin, and black pepper to the bowl and mix well.

Add 4 to 5 tablespoons of olive oil to the salsa and mix.

Check on the chickpeas, adding boiled water as needed.

Once cooked, fish out the bay leaf.

To serve, take 2 or 3 ladles of chickpeas with sauce, add 1 tablespoon of salsa or more if desired, and mix.

Add pickled pepper (pepperoncini), freshly grated tomato, and serrano pepper on top.

Garnish with cilantro and lemon slices, adding olive oil to taste.
