1

Cut 1 pound of tilapia fillets into bite-sized chunks.

2

Place the fish chunks in a glass dish and set it aside.

3

Mince 2 cloves of garlic.

4

Zest 2 large limes to make 4 teaspoons of zest.

5

Juice both limes to make 1/4 cup of fresh lime juice.

6

In a small bowl, add 1/4 cup of extra virgin olive oil, 2 tbsp of distilled white vinegar, 2 tbsp of fresh lime juice, 2 tsp of lime zest, 1 1/2 tsp of honey, minced garlic, 1/2 tsp of cumin, 1/2 tsp of chili powder, 1 tsp of seafood seasoning, 1/2 tsp of ground black pepper, and 1 tsp of hot pepper sauce.

7

Whisk all the ingredients until blended.

8

Pour the marinade over the fish to coat it thoroughly.

9

Seal the dish with plastic wrap and place it in the refrigerator for 6 to 8 hours.

10

In a small bowl, add 1 (8 oz) container of light sour cream, 1/2 cup of Adobo sauce from Chipotle peppers, 2 tbsp of fresh lime juice, 2 tsp of lime zest, 1/4 tsp of cumin, 1/4 tsp of chili powder, 1/2 tsp of seafood seasoning, and salt and pepper to taste.

11

Stir to combine the dressing ingredients and cover the dressing to refrigerate until serving.

12

Dice 3 ripe tomatoes, chop 1 bunch of fresh cilantro, core and shred 1 small head of cabbage, and cut 2 limes into wedges.

13

Preheat the grill pan to high heat and lightly oil the grill.

14

Remove the tilapia from the marinade and drain off any excess marinade, discarding the remaining marinade.

15

Place the tilapia chunks on the grill and grill the fish pieces for about 9 minutes, turning them once.

16

The fish can also be cooked in the oven at 350°F for the same amount of time.
