In a sturdy bottom pot, combine 8 ounces of sugar and 2 ounces of water.
Add about a teaspoon of lemon juice to the pot.

Allow the sugar to caramelize until it achieves a light caramel color, which will take a few minutes.
Once the desired color is reached, place the pot on ice to cool it down immediately.
Stir the mixture a little as it cools; it may harden on the bottom of the pan.
Heat 3/4 cup of heavy cream in a separate container until warm.
Carefully pour the heated heavy cream into the cooled caramel; be cautious as it may cause splattering.
Return the pot to the heat and bring the mixture to a boil for about one minute, ensuring the cream is fully incorporated into the caramel.
Once done, let the caramel dip cool before serving with your favorite fruits.
