1 cup farro
1 cup mushrooms, sliced
1 cup peas
1/2 cup spring onions, diced

Rinse the farro under cold water and drain.

In a large pot, heat the olive oil over medium heat. Add the diced spring onions and sauté until translucent, about 5 minutes.

Add the sliced mushrooms to the pot, cooking until the mushrooms are tender, about 5 minutes more.

Stir in the farro, salt, black pepper, and red pepper flakes (if using). Cook for 1-2 minutes, stirring frequently.

Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 30-40 minutes, or until the farro is tender and most of the liquid is absorbed.

Once the farro is cooked, stir in the peas and cook for an additional 2-3 minutes until heated through.

Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
