Bake a 27-inch cake and a 5-inch cake, adding a handful of sprinkles into the batter.
Remove the cakes from the pan, level them, and cut each cake into two layers of equal size using a ruler.
Color the buttercream by adding orange food coloring gradually and mixing until the desired shade is achieved.
Fill the larger cake with two layers of orange buttercream and one layer of purple buttercream, and fill the smaller half cake with buttercream.
Crumb coat both cakes with a light layer of buttercream to hold in crumbs, then chill them in the fridge.
Make chocolate ganache by chopping 72% dark chocolate finely, heating heavy cream in the microwave for 5 seconds, and pouring it over the chocolate. Let it sit for 5 minutes before stirring until smooth.
Whip the ganache in a mixer until fluffy, being careful not to overwhip it.
Cut eight cookies in half to create cookie sandwiches, piping ganache on top of each half before placing the other half on top and decorating with sprinkles.
Prepare chocolate-dipped marshmallows by cutting 10 marshmallows in half, dipping them in chocolate, and rolling them in sprinkles. Repeat with another 10 marshmallows using dark chocolate.
Ice the chilled cakes with a thicker layer of buttercream, adding sprinkles around the sides by holding the cake in hand and pressing the sprinkles on.
Insert dowels into the bottom tier for support before placing the top tier on.
Pipe decorative borders on the cake using a number 20 open star tip, adding leftover purple buttercream dots between the tiers.
Place a cake topper on the top tier to finish the cake.
