Preheat the oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat until shimmering.
Add chopped onion and cook until translucent, about 5 minutes.
Stir in minced garlic and cook for 1 minute until fragrant.
Add spinach and cook until wilted, about 3-4 minutes.
Remove from heat and let cool slightly.
In a bowl, combine feta cheese, ricotta cheese, egg, parsley, black pepper, salt, and nutmeg.
Mix in the cooled spinach and onion mixture until well combined.
Lay out pita bread and spoon the filling onto one half.
Fold the pita over to enclose the filling and press edges to seal.
Brush the top with olive oil and sprinkle with sesame seeds.
Place the filled pitas on a baking sheet.
Bake in the preheated oven for 20-25 minutes until golden brown.
Remove from the oven and let cool for a few minutes before serving.
