Grate a stick of butter into a bowl using a cheese grater.
Add 2 cups of all-purpose flour to the bowl.
Use a fork to break apart the butter pieces in the flour.
Use a bench scraper or pastry cutter to cut the butter into the flour until it resembles coarse crumbs.
Add 1/4 cup sugar and 1/4 teaspoon salt to the mixture and continue to cut it together.
Use the fork to stir the mixture until it is well combined.
Add 1/2 cup sourdough starter and 1 teaspoon vinegar; mix with the fork until incorporated.
Switch to hands to squeeze and press the dough together until no dry bits remain; add a teaspoon of ice water if needed.
Shape the dough into a rectangular shape using plastic wrap and chill in the fridge for at least 2 hours, or up to 24 hours.
Roll out the chilled dough into a rectangle about 1/8 inch thick on a floured surface.
Trim the edges of the rolled dough with a pizza cutter for straight edges (optional).
Cut the dough into four strips using the pizza cutter.
Lightly beat 1 egg and use it as an egg wash to seal the edges of the pop tarts.
Place about 2 tablespoons of fruit preserves in the center of each strip, leaving room around the edges.
Fold the dough over the filling and press the edges together to seal.
Use a fork to press and seal the edges for a classic pop-tart look.
Transfer the pop tarts to a baking sheet lined with parchment paper.
Brush the tops of the pop tarts with the egg wash for a golden crust.
Preheat the oven to 350°F (175°C).
Bake the pop tarts for 25 to 30 minutes until golden brown.
Transfer the baked pop tarts to a cooling rack.
Mix powdered sugar with water to create a thick glaze.
Spoon the glaze over the warm pop tarts, allowing it to drizzle down the sides if desired.
Sprinkle with coarse sugar for texture.
